Market, Jean-Georges Vongerichten's glitzy restaurant at the Shangri-La Hotel, employs much of the style and level of service that is available at the flagship in New York. The menu, from the executive chef David Foot, is of a piece with Mr. Vongerichten's French-Asian hybrid style, but skews more toward the Northwest.
